Fabrice Carlier

Fabrice Carlier, cuisinier officiel du Français

Fabrice Carlier brings together fine dining and maritime tradition. He began training at the age of 15 in a gourmet restaurant in the Ardennes, before serving for 15 years in the French Navy as a chef to admirals and as a baker and pastry chef aboard nuclear submarines. Returning to his home region, he opened a fine-dining restaurant that was featured in the Michelin, Gault & Millau and Champérard guides for 14 years.

After a 50-year career spanning the French Navy and the Toulon Arsenal, Fabrice now supports the Grand Voilier École association aboard Le Français. For the past four seasons, he has volunteered his skills and experience to the groups welcomed on board. As an Official Chef of Le Français, he turns every voyage into both a culinary and a human experience, and is honoured to be sailing once again aboard this magnificent tall ship.
